Cheesy Brocolli Bake

I promised yesterday that if my new receipe of Cheesy Brocolli Bake turned out okay then I would share it here. Well, it turned out better than okay! Our friend that came for dinner announced that it was one of the best meals that I have ever cooked. After that comment it would be criminal for me not to share! It is so simply to make and you can change the ingredients for whatever suits your family. It is technically meant to be a vegetarian dish but I added some Ham because my husband belives that every meal should contain some kind of meat. Off course it is also Gluten Free.

You will need..

Brocolli - Boiled for 5 minutes.
Onions - The receipe said spring onions but I only had normal cooking onions. I used those and it tasted fine.
2 Peppers, chopped.
Ham - Leave this out if you want it vegetarian.
Cheddar Cheese.
Tomoatoes - Quartered. I left these out because none of us like them.
2 large eggs

(You could also swap the Brocolli for Cauliflower. Apparently it tastes good with either :)

This is how simple it is... Literally throw all the ingredients into a caserole dish whilst the Brocolli is boiling.

Once you've drained the Brocolli, add that to the dish.

Whisk the eggs together and pour into the pan. Mix it all together. Sprinkle lots of cheese on top.

Cook on 200 degrees for roughly 20 minutes or until the eggs are just set.

Serve! I served mine with mash potatoes but I imagine it would also be great with some pasta.

This is going to be one of my new favorite meals to cook. It took no time at all and was a massive hit. Any meal that ticks those two boxes is a must for all busy Mum's!
